This is the Shakambaris take on khakhra. Khakhra is a thin, crisp Gujarati-Rajasthani flatbread, rolled paper-thin and roasted on a griddle until it snaps.
Each khakhra is hand-pressed and dry-roasted rather than deep-fried, which is what gives it the light, brittle crunch. Eat it straight from the pack, or break it over curd, pickle, chai or a bowl of soup. It travels well in a lunchbox, office drawer or overnight bag.
