Shekhaji Khatta Meetha sits in the Shekhaji namkeen line, finished with the sweet-and-sour balance of khatta meetha. Namkeen is the savoury Indian snack family that covers bhujia, sev, mixture, mathri and para, seasoned with a house blend of spices.
Made in small batches to a Rajasthani recipe and seasoned while still warm, which is how the spice grips the sev. Serve with evening chai, put it out for guests, sprinkle it over poha and chaat, or keep a pack in the office drawer.
